1 large onion, coarsely chopped.6 slices ginger.
3 cups beef stock or low-sodium broth.1/2 cup soy sauce.1/2 pound shiitake mushroom caps.
1 pound large carrots, sliced diagonally 1/2 inch thick.1 1/2 pounds daikon, peeled and cut into 2-inch chunks.
1 1/2 teaspoons cornstarch mixed with 2 tablespoons water.
Season the roast with salt and pepper and dust with flour.Heat the oven to 400°.
In a 10- or 12-inch ovenproof frying pan or large saucepan, melt 3 tablespoons of the butter over moderate heat.Add the onion and carrots and cook, covered, stirring occasionally, until the onion is translucent, about 5 minutes.
Add the mushrooms, 1/4 teaspoon of the salt, and the pepper.Cook, covered, stirring occasionally, for 5 minutes longer.. Stir the flour into the vegetables.
